Melon + Prosciutto Salad
This Melon and Prosciutto Salad makes my day every time I make it. Not only is it extremely healthy but it also has a grade of difficulty of "zero" It is basically, chop, cut, sprinkle, eat. I also make variations of this salad so that I never grow bored, instead of basil (by the way, at is thai basil) you can use mint. You can leave out the ricotta and use parmigiano or use different color melons and add some lemon zest. Basically you can be as creative as you want.
